Low Carb, Protein-Packed Mudslide Balls

They are super simple to make:
 
1 Packet Baja Bobs Mudslide mix
1 cup rolled oats
1/2 cup ground flax seed meal
1 tablespoon chia seeds
1/4 cup unflavored protein powder 
1/2 cup fresh ground peanut butter or unsalted peanut butter
1/2 cup sugar free chocolate chips 
1/4 cup unsweetened coconut shavings
1/3 cup coconut oil
1 teaspoon vanilla
 
Mix all ingredients in a bowl. If not holding together, add additional coconut oil (or maple syrup for those not worried about sugar). Shape balls by using a teaspoon and form in your hand. Put on a wax papered tray and refrigerate for an hour. Store in an air tight container. Great on the go snacks, and perfect for a post workout snack.
